And since I already mentioned Firefox, I have to express my utter amazement by the design of it.
This analogy doesn't work either. Firefox must be transparent and simple, because it's used by millions, and used for a simple task of viewing pages. A vector editor is a very different thing with a very different audience. Editing a vector drawing is all about tweaking things. Why should we be afraid of letting people tweak things in preferences - if at the same time we allow and encourage them to tweak things on canvas in new and unexpected ways?
Yeah, I think this is a very valid point. You have a target audience, you have to fit to that and not necessarily some HIG. Eg DTP is typically a very complicated area as can be vector or pixmap based graphics, and the users expect certain features from the GUI. Getting the balance right IS hard. Many have said the InDesign PDF export GUI is hard to manage, but love the Scribus one. This will be hard to keep as simple as we add more PDF 1.5 and 1.6 features in the future though.
That Firefox thing annoys me as I switch from my PCs to others' a lot, but having given them a better browser, its much less of an annoyance than spending hours removing spyware from friends and families and customers PCs.
