Thanks for your offer of help, I want to go to the developers list and really flush out all the issues we have into a document you can use to see where we are.
So I've added the developers mailing list to this email and point everyone to this wiki page:

Everyone: please have a quick look at the page, it's mostly empty right now, so it needs your help to fill out some of the information. Hopefully this is a way for us to feed back information to Gtk/Gnome about the library we depend on.

On a personal note: as a heavy Inkscape user, I'm really excited about the prospect of the GTK+3 port. Dark themes, symbolic icons, improved file dialogs, overlay scrollbars, all the new widgets... it's going to be great!
On the design side we're happy to advise on best practices for the new widgets and how to use the new CSS machinery.
