Actually, I have seen it also called something like "Optimal Edge Detection," so that is an alternative.

However, it just seems proper to give the inventor credit for an algorithm that he gave to the world. It would be unfortunate to to fail to do so, merely because his name is similar to an adjective or adverb.
How about "Optimal Edge Detection (Canny)" ? It would at least still fit on the Gtk::Label.
