Generally top would give you some command line option to dump directly and exit, etc.

You can take that and pipe it through grep to isolate only Inkscape and then have that go into a file

I've forgotten the top options off hand, but I also work mainly on an OS X box, which is different. So just man on top should give you what you need there.
