Like you say, Opacity doesn't need a colour preview because traditionally it was applied to a whole object (stroke and fill). But a single selected stop only has one colour (it is flat) so wouldn't it makes sense to maintain a colour preview of the transparency just like you maintain a colour preview of RGB?
If stops don't need an Alpha color preview, why do flats (solid fill) need an Alpha preview? Why wouldn't flats abondon Alpha for Opacity also? Or is this the intention?
