I think that is automatically generated from the CFBundleGetInfoString attribute in our Info.plist file in the app bundle. Or alternatively I may have chosen it as the author name when I registered an apple creator code for the Inkscape project ("Inks"). In any case, I don't have an extra privileges that allow me to edit that download entry.
So you actually registered for Inkscape at Apple Developer Connection? If this is the case, you can modify your submission. I though this car was nice to show and that gradient editing on canvas was one of Inkscape's strengths. But please, feel free to replace it with something else!
