Age & occupation gives one an idea of how well they may adjust to change. Generally speaking, younger and less "formal" people adjust much more easily. Not joking, the attorney that I used to work for didn't know that in Windows that you can MOVE the windows around the screen... and she was a computer user since the 3.1 days. She couldn't work that change into how she operates a computer.
Occupation helps determine what type of expectations they may have going into something. My old co-workers expected things to work how they expected them to work (which was all different, seemingly based on position).
It gives an idea of their potential level of experience with this type of software. A 20 year old construction worker has much less experience than a career 50 year old graphic designer when it comes to a graphics application. The same goes for if it was a 20 year old graphic designer vs a 20 year old construction worker. It should also be noted that this is also why side interests and hobbies matter... that 20 year old construction worker may have been a graphics hobbyist for a long time.
