Just as a matter of interest, I now have CVS building on a 10.3 machine with fink unstable. The only dependency that wasn't in fink was libgc; I downloaded and installed 6.5 the old-fashioned way and it worked fine.
Note that (when building using fink libraries) you will need to specify -I/sw/include and -L/sw/lib in your CXXFLAGS and LDFLAGS when running configure.

I first installed inkscape 0.41 from fink unstable, and it pulled in 6.4-1 of gc
I'm now happily building CVS Inkscape (as of last week), using g+ +-3.3 explicitly.

i'm on tiger, and use fink, and would very much like to follow in your footsteps, so if someone gets a chance to do a line-by-line HOWTO for OSX/Tiger/Fink users, i'd be very happy to run through it .. ;)
