For text however, as I said before, it would be nice to have both options and to be able to choose when importing. Sometimes it is more important to have text as text; sometimes it is more important to have it look right. Realistically, Inkscape won't have support for embedded SVG fonts any time soon, and this means these two goals will remain mutually exclusive until then. So, can you implement such an option?
Yes. So the input dialog appearing when opening a PDF document should have the options for selecting whether you want text as path or as text (with embedded fonts/without them) and the possibility to select the page you want to import (with preview). This dialog will be present as soon as it will make sense :) (ie., when we'll have these options actually implemented)

Have a look at the Gimp (2.3.x) PDF file import dialog. It has a really nice UI.
