thanks for asking, yes, please keep them separate. Multiple MRs are
possible, but you need multiple branches for those, where each branch
contains the changes to one specific item you are working on (in the
case of the manual, that would be chapters).

Are you using GitLab only for making your edits or do you use a local
copy of the repository and use the command line to push your changes up
to GitLab?
