Could you please specify which version of Inkscape you tried?
Also, can you please start up Console.app (in /Applications/Utilities) and then try starting Inkscape, then please post any error messages shown by Console.app.
As Stu says, Xquartz installs an updated version of X11.app (found in / Applications/Utilities). This should launch automatically if it is not already running when you start Inkscape.
