Interesting idea - I've tried it out (with both "Snap nodes to objects", "Snap to object paths" and "Always snap" enabled) but (suprisingly) I still find it very difficult to pin new nodes exactly on the intersection point...
I tried it too using the double-click-while-node-editing, but it doesn't seem to obey object snap settings. Would be pretty spiffy if it did, though.
The approach I've used when needing to do this is zoom in really close to the intersection point, select the line to add the node to and just manually double-click on the junction while in node editing mode, and touch up as needed. Not CAD quality perfection, but good enough for my purposes.
