The default can also be set in the Text and Font dialog.

1 - Type some text and set the fill and stroke as you like it. Leave it
selected.
2 - Double-click Text tool icon to open Inkscape Preferences > Tools >
Text.
3 - Tick "This tool's own style" option.
4 - Click the "Take from selection" bar.
5 - Done :-)
I think the default is black fill and no stroke, but I'm not positive about
that.
I hope this helps some anyway.
