I had a very similar problem when installing on my brother's G5 with OSX 10.5 and two video cards and 8Gb. The problem was that he had two screens, one set as screen 1 (DVI connection) and screen 3 (VGA connection) and the other screen set as screen 2 (DVI connection). I could see the Inkscape menu bar entry, but nothing else.
What I eventually discovered by accident was that Inkscape had been automatically sent to screen 3 (who knows why?). I found that simply because I was mucking around with settings on his monitor and switched from DVI to VGA on screen 1, which showed me screen 3. Once we'd found the window, we dragged it across to screen 1 and it stayed there for subsequent restarts. I then told my brother to disable the third screen in his setup, since it was only as a backup and never used.
If you can see the Inkscape menu bar entry, that means it is running, but probably minimised or hidden in some other way. Because Inkscape still uses X11, the main menus appear within the actual Inkscape window, while the menu bar entry doesn't have much at all (X11 stuff I think?). You might want to check your configuration to see if it's similar to my brother's.
