I had this problem and solved it after a bit of fiddling around. The same thing can happen on Linux and can be solved analogously. That's the good news, but I now have to confess that I cannot remember the details...
The problem in my case was the format of the font file. I had bought a font in OTF format. Looking at the font in question, I see that I now have it in DFONT format, which works OK with Inkscape. (I think TTF worked too, but I'm not sure.)
To convert the font from OTF to DFONT, I used FontForge, an X11 application available from http://fontforge.sourceforge.net/. It should work with other formats too. The installer, a PKG file, silently hides fontforge in /usr/local/bin.
Hope this helps

the text properties dialog, e.g. I downloaded today a free font called "Aardvark Cafe", it shows up correctly in Gimp.app, but it's not shown in the Inkscape font list.
I've also seen this problem with some fonts on OSX. I usually use Inkscape on Linux where the same font works.
I think the font was this one: http://www.dafont.com/font.php?file=a_yummy_apology
