If I remember correctly, once you place the text onto the path, double click it to get the text cursor. Then use the cursor keys to go to the beginning of the text and then hold ALT+CursorKey to shove it along the path. You can also do this within the line of text to adjust the kerning. This will move it along the path - although I think in only one direction - and it ain't ultra-quick I don't think...

If there is a way, please let me know, and please document it.  I couldn't find it for the life of me and, for the first time ever, I starting screaming profanities at inkscape
