Double click on a patch edge (the straight or curved red or blue lines). The patch will be divided at the point you clicked. One can also select two adjacent corner nodes and hit Shift-I. The patch will be split at the midpoint.
I've tried spinning the number on the control bar, but doesn't do it either. I know that double-clicking on a regular linear or radial gradient is supposed to add a stop, but it doesn't work for me. I always have to use the gradient control bar to add new stops. So I wouldn't be surprised if that's how the mesh is supposed to work, but doesn't.
Linear gradient stops can be added by double clicking on the line connecting the two end stops. Adding a stop to a radial gradient works the same way.
I'm thinking of posting a feature request "bug" report, but not sure whether I need to ask for the ability to add nodes/stops, rows or columns; or just the extra button on the control bar.
