Any half-ways sensible GTK based thumbnail browser will be using gdkpixbuf and will have librsvg installed which takes care of the SVG thumbnails. Ideally you want this kind of thing fixed generically in GdkPixbuf so that the whole desktop will benefit but that doesn't always happen unfortunately.
Adobe Illustrator (.ai) support is more complicated, and is actually more than one question.
Since Adobe Illustrator 10 the file format uses a special form of PDF and assuming certain options are enabled it is possible to view the file inside Acrobat Reader or any other good PDF Viewer. This does not work for all files but since the underlying work has been done already it might be relatively easier convincing Nautilus developers to get it to work. (Remind me to file a request for PDF thumbnailing if Nautilus or if it does already exist I'll make a more specific AI related request.)
