Thanks to the "Printing command in Linux" thread, I now discovered that putting "| lp" in the print dialog works in OS X, too, printing on the default printer. And "| lp -d <printername>" prints elsewhere. I'd still need to discover how to make some kind of print options dialog appear, if possible, but anyway I can print on a virtual PDF printer and then print the resulting PDF with Preview and the standard OS X print dialog.
