I assume you are talking about this folder: /Applications/Gimp.app/Contents/Resources/share/themes/Default/gtk-2.0

Do you put the gtk-2.0 folder into /Applications/Inkscape.app/Contents/Resources?

I've tried it, but it doesn't work, I'm still having the plain old interface.
