I'm not sure about question 2, but I just tried creating a  multi point line and put an arrowhead on it. Then when I select the node editing tool I can grab the node at the arrowhead and move it around freely and the arrowhead stays with it and stays perpendicular to the end of the line (ie. it remains pointing in the correct direction). As far as scaling goes, you might end up having to just adjust the nodes with the node tool to reorient the line. If you try scaling it you'll mess up the line width anyway along with the arrowhead.

I also tried the color matching method you described in (2) and it seemed to match colors correctly. I'm not sure about the end node issue though, it didn't seem to add any nodes to the arrow object or line as you described, it simply made the arrow head match the stroke color of the line.
