Is there a way to stitch two photos together? Or just do it manually?
I don't know of a way of doing this in Inkscape, but Autostitch works very well. See here:

I have only been able to do it by importing 1st image and then 2nd with a good overlap, manually aligning them, selecting both and exporting as single image. works better if both images are 100% straight to begin with.
