There are several ways of making screencasts. The first two that I would recommend are recordmydesktop (and gtk-recordmydesktop for the gui version) and xvidcap. Both of these programs will record whatever you do on the screen along with sound. Just speak into your microphone and you're good to go. They are very easy to use. Upload to youtube as long as it's under 10 minutes and under 100mb.

Another one that I like is vnc2swf. This one works by opening a vnc session and records the entire session. However, no sound is recorded. The output is an swf(shockwave) file.

There is one that Richard Querin and I are playing around with. It's called Wink. Works for both Linux and Windows. It records video and sound. Outputs to a swf and compiled html file for posting on your web site. This one is very interesting but I have not mastered it yet.

On windows I use SnagIt 8. SnagIt does a superb job.

I use ffmpeg and mencoder to convert to whatever format I need.
