I am having many issues with the current version of Inkscape for Mac OS. Version number is; Inkscape 1.1 (c4e8f9e, 2021-05-24) and it was downloaded from Inkscape's website.
*Before I add a bug report, can someone tell me how to completely remove Inkscape from my system? I am using Mac OS Mojave, 10.14.6 on a 2012 Mac Pro computer and Mac OS Catalina, 10.15.7 on an 2012 iMac computer. Both systems are having the similar issues with Inkscape and only Inkscape.*
Biggest issues are crashes. Crashes opening various files, crashes closing various files, while crashes while working in Inkscape. I have looked thru the bug lists and see some of the issues there. My previous version, 1.0.2 (e86c8708, 2021-01-15), also had some crashing issues, however, in the latest version, the app is very unreliable and hard to use for even the simplest of drawings.
Here is an example. The attached drawing will crash Inkscape. Notice the lines with arrows on the end. Remove the lines with the arrows on the end. Re-create the first line starting at the circle and ending across the 2 horizontal lines. Select the line you just drew and try to add an arrow to the end. Inkscape should crash, at least it did today when I tried this again after the first crash. This was a new drawing in Inkscape.
This is just one scenario. I've had crashes adjusting gradients, fills, outlines, object sizes, points in bezier lines, adding and/or adjusting text , , , etc. Many drawings from www.openclipart.org will crash Inkscape when opened or if you try to do any editing in the downloaded svg file.

I've opened the attach file in Inkscape 1.1 on Linux and it appears to be ok. Although this doesn't say much.
You certainly have information information to post this to the bug tracker at https://inkscape.org/report
The macOS version is known to have significant issues. Although not quite as many crashes as you're reporting are expected, even there. If you're able to work with us on chat.inkscape.org perhaps we could come up with a way to get crash reports for the system.

Just for the record, I opened it using /usr/bin/inkscape (1.0.2) on Debian Linux "testing" and it opened fine too.
