I don't know if I understand you correctly, but I guess the answer to number one would be: use the last (bottom-most) tool from the tool panel called "Create diagram connectors". Click it, hover over a previously created object and the center will light up. Click on the red rectangle and connect it to another object. Now, the connector will move along with the objects.

This could be used to answer your second question as well. Create three connectors emerging from one, invisible, object.

I have two questions:

1) Is there a way to join two objects using a path so that when I move the objects, the path's endpoints get dragged around? I frequently draw planar graphs and this ability would be useful.

2) I suspect there's some vector-graphics theory reason why it's impossible, but is it possible to have three paths emerge from one node? Is there an aesthetic way to fake it if there isn't?

You can also combine two paths... so they remain distinct and editable, but are locked together in a single object - this doesn't allow 3 paths extending from the same node, but it does mean you can move them together as one object to mimic that effect.

Find it in Path -> Combine (ctrl-K)
