Hi all, I am wondering if there is a function to make two objects split into separate objects where they overlap. There is a function in Illustrator to do just that, but I can't seem to find a similar function in Inkscape.

So two overlapping circles turn into three separate objects? I don't think there is a function to do that, but I imagine with the existing boolean operations code it wouldn't be terribly difficult to implement. Put in a Request For Feature (RFE) through the website for this, and hopefully it'll be added soon.
