Stupid question : is there a way to select no stroke (i.e. none at all) from the palette on the bottom of the screen? Indeed, no-fill too?

Not yet. Jon Cruz is reportedly working on that. But right now you can use another one-click shortcut for that: middle-click on fill or stroke swatch in the selected style indicator (in the statusbar below the palette).

Also very cool for when the fill/stroke form crashes and won't respond to mouse input but I'm not in the mood to restart Inkscape ;) But that's for the bug tracker.
