When I create connectors between nodes, these seem to be created as straight lines. How can I make them bezier?

After you draw the connecto you can use the edit path nodes tool to change it to whatever you like. However if you move one object and the connector has to be repositioned it goes back to a straight line (at least in 0.45.1)

Yes, the automatic rerouting causes it to be turned back into straight lines when the attached shapes are moved. The code used to do the routing has some support for generating bezier paths, and this capability will likely added to Inkscape early next year, along with other connector improvements.

In the Node Tool (F2), select one of the nodes you just connected. Hold down Shift, click on the node and drag out to pull out the node's handle. Then you can move it around like normal.
