Could someone please explain to me what function the File/Vacuum Defs command does.

It removes defs that are not used in the image.
After converting text object to curve, Vacuum Defs not erase entry about text style (font type, size, style, etc). Is that bug or feature?

Text style is stored in text object itself, not in defs. Therefore it's not affected.
Defs contain all the patterns, gradients, markers, etc.
