Switch to Node tool (F2) for editing a path.
Thanks and yeah I know about the node tool, but if I'm not missing something obvious it doesn't let me draw in changes to the line. It just lets me click and add points and drag in the points, which is at least for me a very very slow work-flow. Do you understand what I'm trying to do? (maybe I'm just missing something obvious in that tool?)

I'm not sure I understand, indeed. For me the Inkscape workflow is very fast and handy, whereas the Illustrator way seems rather convoluted. Maybe others who have more experience with Illustrator than I can provide more advice.

This sounds to me like you can change the stroke after you did it by just drawing again near some part of it. The affected part of the stroke will then be changed accordingly (think of a piece of string which you can adjust by just dragging your finger along it).
I like the idea. When you do sketches with a pen, you get the idea of the shape by stroking again and again with little pressure. It would be cool if you could instead adjust the path by drawing again close to it to fix the parts you don't like.

You mean, redraw part of a stroke by freehand pencil? I.e. make it cut and merge through the existing paths at any point, not only at the ends?

Say, I want to draw some cartoon character but a part of the bend of the line looks bad to me.
Instead of stroking again, I can just go back to the part of the stroke that I don't like and adjust that.
Maybe the tool should use some kind of force: If I draw very close to the stroke, it snaps to the cursor. If I draw farther apart, it just bends a bit.
I feel that would be an incredibly powerful tool especially if you can use it on old strokes, too, and not only the last one. Using that, I would create a rough sketch and then, I could just improve line after line until I get what I want.

This is what you can do in Illustrator. The Illustrator manual says:
"Position the pencil tool on or near the path to redraw, and drag the tool until the path is the desired shape."

I use both Illustrator and Inkscape and I do not think that Inkscape has that feature.
