I can’t seem to get the diamond node to appear. Also, how can I make the background of my image transparent?

It's just the same except you control the amount the path expands by. So follow your tutorial up to the bit where you Union everything, then, instead of selecting Path / Outset on the menu, select Path / Dynamic Offset. With the node tool selected, you'll see a little diamond node (usually at the top centre). Click on this and drag, and your path will enlarge.
