I think I understand both viewpoints. Of course I like the color gestures (and use them all the time), but I also agree that where there's a swatch, a new user will likely try to drag and drop it somewhere. So perhaps the most important question is, is the action "drop the color of selection on some non-selected object" common enough to enable it as an option?
