I do look at that dialog, but I don't really grok it. Is there a way to keep a running log of RAM use perhaps?
Try running 'top' in a terminal. It should give you idea whether the slowness comes from heavy CPU usage (the CPU column) or from memory exhaustion (the MEM column) and if latter, what % of memory gets eaten before the slowness starts.
