The single-stop ones can be edited in the Fill and Stroke dialog
already (whether assigned or not). It seems like the stop selector
widget could be added on that page just below the swatch selector
widget and just be greyed out if it's a swatch with only one stop.
This would then allow editing the unassigned gradient swatches as
well.
