It's not a huge problem but... ever time the file is regenerated it shows up in 'git diff' which because the file is so large and comes first, makes finding the diffs one is interested in harder.

That's what I suspected. I also suspect it wasn't always the case that the pot is regenerated upon each build/commit - must be a recent change. I just wanted to note that another solution would be to go back to manual regeneration of the .pot file as a separate make target.
