If I uncheck that, I just get 1 Image I want 40 images. It randomly puts some on my desktop, but where is the rest.. the progress bar is clearly processing image 1 of 40 , 2 of 40 etc..

The problem is the check on "Batch export 40 selected", remove the check that option. and select "selection" and export normally.
