I get the sense that the problem for many projects is that the developers are programmers first, and whatever the application's relevent field is becomes a secondary concern. As a result they don't eat their own dogfood as much as they should.
In contrast, Inkscape developers are probably among the most active users of the application. Bulia in particular, since he uses Inkscape day-to-day in a production graphic design environment.
