Don't even bother trying eps. Stick with png- just export it at 600 dpi. The only reason you would use word is to print it later, so exporting at the printer resolution probably does a better job than letting word or the printer driver rasterize it.
Don't forget the filesize. I used PDF (with vectorgraphics) as image format with images plotted from MATLAB und ipe (as editor) and the images had a size of only few kB.
