I have prepared a diagram using unicode characters (Greek). When I save this diagram as eps, Inkscape displays the correct Greek characters. You should convert the unicode characters to paths. select the characters and choose Path -> Object to path
or shift-ctrl-C
or use the node tool and click the button that looks like a figure 8 with 3 nodes highlighted (convert selected option to path)
